Shredded natural smoked chicken with crisp cos, ripe avocado, cherry tomatoes and a tangy honey-mustard dressing. A 15-minute lunch that tastes like much more.

Method

Whisk the dressing ingredients in a small jar until emulsified. Taste and adjust seasoning.

Arrange the cos leaves across a wide serving bowl or platter.

Scatter over the shredded Mt Warning Smoked Chicken, avocado, tomatoes and red onion.

Drizzle generously with the dressing, scatter the herbs and finish with cracked pepper.

Serve straight away with warm crusty bread.
Cook's tips
- →Soak the sliced red onion in cold water for 5 minutes to mellow the bite.
- →Add toasted sourdough croutons or crumbled feta to make it more of a main.
