The Mt Warning Bacon Cheeseburger

A proper pub-style cheeseburger built around thick rashers of our naturally smoked bacon - caramelised onions, sharp cheddar and a tangy burger sauce on a toasted brioche bun.

The Mt Warning Bacon Cheeseburger

Method

    Whisk the burger sauce ingredients in a small bowl and chill while you cook.

    Heat a splash of oil and the butter in a heavy pan over medium heat. Add the sliced onion with a pinch of salt and cook gently for 12–15 minutes until deeply caramelised. Set aside.

    In the same pan, fry the Mt Warning bacon over medium heat until crisp at the edges but still tender, about 3–4 minutes a side. Drain on paper towel.

    Divide the mince into 4 loose balls - do not overwork. Heat the pan to high. Place each ball in the pan and press flat with a spatula to form a thin patty. Season generously.

    Sear 2 minutes until a deep crust forms. Flip, top with cheddar, and cook another 1–2 minutes until the cheese melts.

    Toast the brioche buns cut-side down in the bacon fat for 30 seconds until golden.

    Build: base bun, sauce, lettuce, tomato, patty, caramelised onion, two rashers of bacon, pickles, top bun. Serve immediately.

Cook's tips

  • Don't overwork the mince - gentle handling keeps the patty juicy.
  • Render the bacon slowly first; the rendered fat flavours everything that follows.
