Mt Warning Smoked Ham
Mediterranean Smoked Ham Pizza
A bright, Mediterranean-style pizza that lets the flavour of our hand-glazed smoked ham lead. Finished off the heat with peppery rocket, shaved parmesan and a splash of good olive oil.

Method

Heat your oven as hot as it will go (250°C+) with a pizza stone or heavy tray inside for 30 minutes.

Stretch each dough ball on a lightly floured surface to about 28cm round. Move to baking paper.

Spread half the crushed tomatoes thinly over each base, leaving a 2cm border. Season with salt.

Scatter over the mozzarella, cherry tomatoes and olives. Drizzle with olive oil.

Slide onto the hot stone and bake 7–10 minutes until the crust is blistered and the cheese is bubbling.

Pull from the oven and immediately drape the Mt Warning Smoked Ham over the hot pizza so it warms gently without cooking out the flavour.

Pile on the rocket, shave over parmesan, finish with a final drizzle of olive oil and cracked pepper. Slice and serve.
Cook's tips
- →Always add the ham off the heat - high oven temperatures dry out smoked meats and dull the flavour.
- →A few drops of good aged balsamic over the rocket lifts the whole pizza.
